You’re asking the wrong guy Twisted. I don’t make it all that often because I’m not a very good beaver trapper. When I make a meal for the whole family, I usually roast beaver similar to how you would make a roast beef. Beaver reminds me a lot of roast beef.

These back straps I just fried in butter until they were browned on the outside and still pink inside.

Maybe some of the Tman cooks with beaver experience could chime in with their favorite recipes.

Do the backstraps and hind legs like you would beef roast with gravy, potatoes, etc.. I cut them from the carcass before I go anywhere near the castors.

I use the front legs too Moosetrot. There’s a good amount of meat on them and they’re easy to remove.

I keep all my beaver meat, cook it anyway you would cook beef, I make Potatoe sausages, and cook it over fire pit, I have every kind of sausage's made out of it, makes great jerky !!

I've had muskrat but never beaver, I like the muskrat....
My question that's always in the back of my mind is...there a difference in the meat from a drowned beaver or a freshly killed bled out one..?

I've had meat from both drowned, and fresh killed and I couldn't tell the difference in taste.

Beaver meat has almost 3 times the omega 3's that beef has. A very nutritious meat.

Back when I was a kid I would debone the beaver after removing as much of the surface fat as I could, then grind with a little beef fat and make burgers. Everyone always thought it was beef. My folks weren't really outdoors people, but they liked it just fine, and where appreciative of the contribution my trapping brought to the table.

Has anyone used it to make jerky ? I have never ate it but I have tried muskrat a few times Your plate looks like it would be worth trying for sure Lugnut
