I would cut mine into section, dip them in eggs, and then in bread crumbs and fry them in a pan on the stove. I do this with vension so I don't know how rabbit would taste.

My favorite way is to cook them in a crockpot on low for 8 hours.First I roll them in a mixture of flour and spices (I use seasoned salt, pepper, onion salt, but you can use whatever spices you like). Pour a can of cream of chicken or cream of mushroom soup over them. They are delicious.

de-bone, pound out like you would a tenderloin, dip in egg, shake in a mixture of flour, powdered taters, crushed ritz crackers, add some garlic, salt, pepper, and then pan fry in butter. It will make you punch your grandma in the face, guarantee

Instant taters make a heck of a fry coating, especially on fish or pork.

If they are young...cut them into frying sized pieces. Bread in a cup of flour with a package (dry) of Good Seasons Italian salad dressing mix. Coat a cookie sheet with oil and load the pieces into the oven at 350. Cook with turning until done. MMMmmmm
If old...I like to cut into pieces, braze nice and brown in bacon fat. Then stew them in the Dutch oven until the meat will fall off the bones. Take the pieces out, make up some veggies (carrots, celery, onion) and make some gravy with the juices and don't forget the dumplings!!! It just doesn't get any better than that.

First thing first!
As soon as you bag a rabbit, clean it IMMEDIATELY. Hold onto one leg, begin pealing off the fur. Cottontails skin easily. You won't get the whole hide off in one piece anyway. Rip it off, keeping any hair off of the carcass. Work from the hind legs forward toward the head. With a sharp knife to open the chest cavity, it's an easy chore when you do it right away, while they're still hot. Cut off the head and it's done.
Carry plastic bags with you and put the rabbit into the bag and then into your coats game pouch. By the time you get it cleaned, the body heat will probably be gone, or nearly so.
Wash down the carcass when you get home, before putting it in the fridge or freezer.
Get ready for some really good eating, no matter what recipe you use...... They're all good!
P.S. I clean red squirrels immediately also. A good thing about cleaning them right away is that I don't have to do it when I get home....... But the flavor or each critter is a lot better to too!

I soak mine in cold, salty water over night to draw out the blood. I quarter my rabbit and put it in the pressure cooker for 20 min to make it tender. Take out of pressure cooker, bread it and season it and fry it like chicken.

Rabbit with "hooters" is pretty good eating!
I bone out the legs and back straps, roll them in flour and fry. Put all the fried pieces in a bowel, pour some "hooters" hot wing sauce over the rabbit. Mix them up and start eating!!!!!!!!
BTW I do soak my rabbit in salt water in the fridge for up to 5 days. The longer you soak them the more tender they get.

Soak in salt water overnight to bleed out. Cook in pressure cooker until meat falls off the bones. Separate meat from bones and remove any bb's. Add to spagetti sauce.

Take the rabbit cut into pieces I joint the hind legs at the pelvis and debone the loins soak over night in a zip lock bag with ½ cup orange juice, 4 tlbs soya sauce, ½ tsp onion powder, and the same garlic powder some savory, sage, rosemary salt and pepper ¼ cup olive oil.
Next day brown in a hot pan with olive oil really brown then cut up an large onion in quarters and break up by hand drop in pan for two minutes. Remove everything and put in a small roaster open a can of hunts crushed tomatoes I’ll the one with sweet red pepper sauce but you can use the regular also. Cover and bake at 300F for 2.5 to 3 hours just keeping the stuff moist the meat will be tender and fall apart we don’t have rabbits here but snowshoe hares a bit bigger than cottontails but I think it would be about the same. I did some the other night and took it in to work even the girls that have never tried game before said the like it and would eat it.

Had some rabbit gumbo just last night. Mmmmm, was pretty good. Took some to work to a guy and he liked it pretty good too. He couldn't believe it was rabbit. I'm a fat southern boy so I like everything fried, but with my rabbit. I prefer to melt some butter and coat the individual pieces with the butter and then roll them in: cracker crumbs, bread crumbs, or crushed corn flakes. Either of these or any combination will do. Salt and pepper to taste. Place in a pan and dribble what butter is left over the top. Cook in the oven at 350 covered for about an hour. Then uncover to brown. It is done when you can lift a lef and the meat stays in the pan. You'll never fry em again. (even the old tough ones, come out this way).
