First its best if you cage, corn feed and give fresh water to the possum for a month. Trust me it makes a difference. Ingrediants 1 whole possum quartered. Sweet potatoes Salt (I like kosher best) Pepper Its good to first cook the possum for tenderness. While the possum is cooking cut up and bake your sweet potatoes with a bit of brown sugar. When possum is good and tender place in pan with sweet potatoes at around 350*. While baking constantly spoon sweet potato "juice" over the meat. Salt and pepper to taste. This makes a nice sweet "porky" tasting meat. You will be suprised.

I wouldn't eat a possum unless i was DYING, then i would have to think about it. They might taste good but i am not going to risk it. I get enough cats and dogs fed to me at China Buffet possums are another story! lol -Mark

Chicken eat their own poop. so you are eating chicken poop when you eat chicken. That to me is pretty nasty. Possum is really good if you cook it properly.

Years ago I nailed a possum.While bringing it back to the house the landlord pulled in and ask me what I was going to do with it..I replied "eat it".He of course thought I was nuts.I cleaned it(they DO have there own aroma..)I baked it following a recipe I found.When it was done the landlord knocked on the door,came in a said "it DOES smell good".After his second plate he agreed it aint bad when fixed right.The meat was a light color and very good.Would I eat another? Probably not..but you won't know if you don't try at least once....
Possum are just another animal, but if you follow KYBOY's suggestion (cage it and feed it morn and fresh water for a month) that will drastically change it'staste and aroma.
