"opinionated" is one word. Stubborn, pig-headed and obstinate work too. But generally good folks. And the wife is Luxemburger, not Polish. Pretty much Dutch, with more attitude.

When I was a kid my mom would basically dump all the leftovers from a week into a casserole dish throw some cheese on top and bake it. My dad called it SOB casserole.

this is what my chili looks like and yes those are black beans I like them better
the recipe is scalable so you can go as big as you need 3 nesco roasters is as big as I have gone that is around 65-70 people.

my mother in law did that , it was awful

because she would take any left overs from the week put them in a bread pan mixed up and call it a casserole and then procced to cook it for like 2 hours on 250

why I still don't know but all the leftovers were gone on Thursday and then you could go out for fish fry on Friday.

when I started dating my wife , Thursday quickly became known as date night.

In the early years of my career I had a mother in law from the Ozarks. She made a dish she called ORTS.

When I asked her what was in it she said it was what ORT to have been thrown out last week

Being a deep south Florida raised girl, I love all those traditional dishes , Louisiana, Mississippi, Texas, raised on all the soul foods too. Love them all. And I cook them all. I can mix and match aspects of those meals too. They can all go together as a happy little group.

what no beans in chili , come on. we just got to where people here stopped putting macaroni in chili

guess we should call it Sconni chili

when I was a kid chili had the spice of waving the chili powder over tomato soup and it almost always had pasta , you know good old upper midwestern extend every meal to feed 2x as many people. left over depression era cooking double down on the beans and add a pound of pasta.
then serve it with shredded cheese and all the buttered bread you could eat

I like it thick

if I wanted to extend it heaped on corn bread was my favorite
bust up some corn bread in the bowl add the chili over the top

Make extra meat loaf. fridge over night then slice 1/2 thick and make

Samiches the next day, Put plenty of Butter on the bread.

you have to be very delicate with the Sconni pallet while some can take heat a LOT can not.

one poblano , some chili powder , or a little can of anchoes

better to leave it good flavor a little light on the heat and have some sauces available to kick it up a notch

my youngest thinks 3 turns of pepper on eggs is 2 too many

goulash doesn't have beans either.
but if I call it Booyah , the rules are much more lax although they do typically have more than one meat.

My dad always talked about my grandma making " must go soup" said she used what ever food that was left over from the week and needed to go.

Personally, I don't like my food items to touch each other on the plate. How in the world could one eat the items in alphabetical order if its all mixed up? Duh.
Having said that, I would dig into that casserole on certain good self image days. smile
