Very similar to how I make Beef Stew, I never forgot the onion though. A two hour simmer and the meat melts in your mouth.
I got myself a seniors' GPS. Not only does it tell me how to get to my destination, it tells me why I wanted to go there.

Great tutorial Paul. For as long as our youngins grow old, we will all remember fur shed days with pops (me) simmering muskrat stew on the wood stove. Filled the skinning shed with fragrances that still rest in our hearts and memories. The Mrs. does not care for it one bit which is a bummer. Pops (me) and the kiddos ate it up.
That was decades ago. I need to trap me some 'rats and get out the pot for these grandkiddoes!

Good stuff Paul! When we first got married my wife worked nights. So I had reign of the kitchen along with a couple of kids. We had a lot of beaver stew and goose stew along with some squirrel stew. Kids loved it! Then my wife started asking the kids questions about what Daddy was cooking. “ We don’t know but it tastes good, “ was the response. Then she tried a bowl of BEEF STEW...and liked it. Until she found out about the wild game that I was actually using she loved it....lol
I will add one tip I use for my stew....crock pot. I prepare and cook on low over night until lunch then eat. No fuss no muss Will add that I agree with what Finster mentioned beaver meat us a richer flavored meat. And for Jackie…. you got throw a few cans of red beans in the mix…great protein and flavor

Similar to original op wanted the carcas for bait then read/ saw about backstraps and hams tried it and found out it is excellent table fair, wife even enjoyed it and she normally does not like wild game. Chunked it up rolled in seasoned flour fried it up and wala gone in a heartbeat
