Anyone have a great brisket sauce to share? Homemade or store bought, either way. I'm going smoke a chuck roast tomorrow and would like some dipping sauce ideas. I like a vinegar based sauce with a bit of heat, if that helps.

Beaver Brand Sweet Hot Mustard. I had some tonight on Pork ribs. It is a plus to any grilled meat. It is not over hot. It is about the only thing I will put on meat other than salt and pepper. I use it as a binder for rub too. I order it right from Beaver Brand.

I don't often use sauce for beef, just a ton of smoke, salt and pepper but when I do its usually a tangy sauce with heavy Apple cider vinegar added with some spicy rub added as well.... In a pinch Ive bought sweet baby Ray's and added the apple cider vinegar and bbq rub to it and was very pleased with the flavor. went well with everything

put a couple chopped up garlic cloves in a quart jar, a quarter of a chopped onion, some chopped jalapeno. Fill the jar with boiling hot apple cider vinegar. Let it cool a couple hours then put it in the fridge a few days. pour the vinegar into a sieve saving the vinegar. then pour the vinegar into a big pan. add 4 cups tomato sauce, 1 1/3 cup tomato paste 1 1/3 cup honey 1 cup unsulphered molasses 2 tsp salt 2tsp coarse pepper 2 tsp paprika 1/2 tsp cinnamon 1/2 tsp chili powder (if you want more kick add cayenne)
heat it slowly and simmer about 5 minutes while stirring.
I make it ahead of time and water bath can it for 20 minutes. You can use it after it cools from simmering though.
