If you plan on eating a lot of that stuff you need to cut out all that dark meat along the lateral line. That's where all the bad stuff accumulates eek

I have tried most fish & crab. Fresh & saltwater. Seafood is good stuff !

Till that day.....

Yes just run your filet knife down the side and most of the red meat cones off There will be a narrow strip where the lateral line is Just cut that out then you have 2 strips of all white meat

I've never heard of a hard head or a gaftops, but your's sure looks good enough to try.

Just fry it; it's better. Never ate a hard head, but ate quite a few gaff-top. Not my favorite.

very little in the way of fresh fish that taste bad when made well.

fish that sat to long , but good and fresh and from cooler water generally good

America only has one issue, we have a Responsibility crisis and everything else stems from it.

'Gaftops' are saltwater sailfin catfish. Correct?

Not sure what exactly 'hard heads' are. What fish is that?

Looks good, nice white meat.

Must be nice to eat ice cream as fast as you want and not have to worry about brain freeze.

Smaller variety of salt water catfish. I akin them to bull heads

They are good eating. Not the equal of freshwater cats but still very good. I think they got the trash fish stigma from being catfish, their ability to slime everything, bait stealing especially when there are so many other good eating fish available.

Grand dad would slit them open and toss them back.

I've eaten both (the hardheads were a drunken experiment that turned out surprisingly good). In S. Texas gaftops are somewhat considered game fish while hardheads are the low of the low, mostly because they are pretty small and present in unbelievable numbers in certain aread
