Getting half decent at the smoking thing I guess. Neve anything left when I make ribs and eveyone likes it.

We we get into some clean water imma try to smoke some of these catfish I keep catching. People keep saying their not edible...but the same people seem to think salt,pepper and lemon juice is seasoning so crazy just gotta figure out how to seal with all the (This word is unacceptable on Trapperman) slime they produce.... Shouldn't be too hard to skin them either

Give paddlefish a go in the smoker. Some good brines out there with brown sugar, combined with the smoke is delicious to me.

Those ribs look to me like they needed more time on the smoker. I prefer them nearly falling off the bones. But there is no wrong way as long as they get to 145 degrees they are safe to eat and taste good. I just like them more tender and more smoke flavor from being in there longer.

The trick to smoking catfish is to brine them of course, then throw them in the smoker. When the layer of fat blisters, scrape it off and finish smoking. The layer of fat on the surface of the fish is what is rancid. Smaller fiddlers about 10" long don't have the fat.
