Give paddlefish a go in the smoker. Some good brines out there with brown sugar, combined with the smoke is delicious to me.

The trick to smoking catfish is to brine them of course, then throw them in the smoker. When the layer of fat blisters, scrape it off and finish smoking. The layer of fat on the surface of the fish is what is rancid. Smaller fiddlers about 10" long don't have the fat.

Those ribs look to me like they needed more time on the smoker. I prefer them nearly falling off the bones. But there is no wrong way as long as they get to 145 degrees they are safe to eat and taste good. I just like them more tender and more smoke flavor from being in there longer. …. That ain’t ribs…. That’s pulled pork … I used to like you a little
