So doing some training in Louisiana for my company right. Basically on call for one of the local refineries. They put us up at a hotel gave us a meal card and van. Barge get some to starting or end a transfer we get called out ,hope in the van and go finish or start it. Been really cool
Anyhow one of the guys I'm training with is a Hispanic dude from south Texas, he says the valley. Cool kid we get along great but he asks me a TON of questions about Mississippi and Louisiana. Food life women culture ect. Well today we go to grab something to eat , burgers at five guys, and I made the comment that we could probably find something better at one of the gas stations around the hotel. Which got his attention and kinda confused him. Proceeded to tell him Southern gas stations will have some.of the best food you've ever had..you might possibly get food poisoning Evey now and then but told hime you can't be a wuss you whole life and it's worth the gamble grin
Well now he's hyped and asking which we should go to and I just kinda tell him you'll know when you see one. Explained you just kinda know when you see one . It can't be too nice or too dirty or the food will be crap or you might get robbed if you don't look or act right laugh proceeded to scare the kid a bit but we pulled up to one of the ones by the hotel and the look on his face laugh

Told him since we're in Louisiana we had to see if they had some boudin. Which he never heard of before. Sure enough they had some smoked individually wrapped in a steamer well he got done looking around and gawking at the fact they had everything from fresh cooked food and lunch plates to liquor, outdoor gear and kids toys we checked out and went back to the van where he unwrapped his boudin link and took a bite I had told hime it reminded me of chorizo and he said he thought it was awesome! Then asked me what was in it and when I just shared and said "well definitely rice.....and idk what else mabye pork, mabye chicken mabye coon maybe possum idk" he got a little concerned before saying how he liked whatever it was laugh
Said he's falling in love with Louisiana now grin

really that shouldn't be a big surprise should be a lot like a Taco truck here , you judge if it's worth trying by how many are in line.


by the way if you find yourself in Janesville WI at Menards , go to the taco truck it's good.

Blessing and a curse when every gas station sells good boudin it will make a dent in the wallet. If your lucky enough to find a fried porkchop sandwich have him try that next.

Boo-dan is a rice and meat sausage. Usually pork or pork liver but boudin rouge is rice and blood. But it can be any number of meats or proteins. One of the milder sausages from that region with seasoning tending to more savory than spicy but there's as many different recipes as there are cajuns.

My wife is from Louisiana and her family on her mom’s side is 100% Cajun. So I’ve had my share of Louisiana food…..and I gotta say, you guys can have it. I don’t need any boudin, etoufe, gumbo, etc. I greatly prefer real American food like burgers, steaks, hot dogs, etc. I never have been able to understand why people think Louisiana (particularly south Louisiana) food is so awesome.
