I border on pimento cheese addict maybe just bordering on cheese addict in general
made up a batch tonight mine is pound softened cream cheese about a half cup Mayo I don't measure just scoop with a spoon to what looks good 7oz jar of Pimentos drained mix half pound shredded sharp cheddar then alternate crystals hot sauce and tony Chachere's creole seasoning mixing till it has my desired level of heat.
yes I have worked briefly at as a cheesemonger it was a volunteer gig, I was paid in cheese

So Pete, do you just mix this all up in a bowl, or do you use a food processor or blender? My husband, also Pete, lol, likes the Pimento cheese in the little glass jar by Kraft. When I made homemade pimento cheese, with a recipe similar to yours, he didn't like it. I'm guessing due to the texture from the shredded cheese, maybe?

I don't even know what a pimento is Peppers, specifically meaty sweet peppers. Bells suffice but properly pimentos are a category of thicked walled sweet peppers that are not bells.

I'm guessing due to the texture from the shredded cheese, maybe? just a bowl if it is very soft cream cheese I may get away with just using a small stiff rubber spatulate to cut and mix If I didn't think to leave the cream cheese out longer or it is newer yes cream cheese closer to the best if used by date gets softer, 2 butter knives and cut the mixture together like pie crust lard texture can vary by how large or small you shred the cheese once the pimentos , cream cheese and mayo are well mixed , add a little cheese mix , add a little cheese mix keep going till it is how you like for me that is about a half pound of sharp cheddar if you add to much shredded cheese at once it clumps

I had a friend that thought you had to eat pimento cheese on white bread with chili. That never made sense to me. I like corn bread with my chili and I like my chili spicy hot. probably just how his mom served it , chili with white bread and a tub of pimento cheese to save baking corn bread it might have even been canned chili sadly there are people who think chili comes in a can , there is a can labeled chili but chili does not come in a can.

You may be right about getting it from his mom. I once asked him and he said "it's just how you eat chili" like there was no other way to do it. It wasn't chili from a can. He liked cooking for people and was a good cook but was stuck in a paradigm with his chili. it's just what you grow up with when I was a kid a LOT of chili was served with noodle depression era cooking hold over maybe coupled with a little Wisconsin my mom didn't make chili but I got it at snowmobile swap meets or grandmas house. hamburger soup with noodles is what they would call it in the south it was not spicy at all not overly thick , but I still liked it. my mother in law a child of depression parents made something very similar
