I asked a similar question about a pirogue once, A Lusiana guy commented those things "flip like a quarter!," "if you wasn't born on one don't bother," lol

another thing is round bottom canoes feel tippy but as long as you don't dip that gunnel below the water you haven't gone over yet , flat bottom canoes feel stable till the you cross that point where the flat bottom breaks seal with the water then you are going over

that is part of why the sportsman's pal Like Lugnut pictured is so popular and you will almost never find a used one cheap. they might be the single most value holding canoe around.
those bumpers are also flotation the bottom isn't flat and it has a bit of roll to the keel

https://www.boundless-pursuit.com/post/sportspal-s-13-canoe-review

for the money if your buying a new trapping tool not sure you could do better
they run around 12-1400 https://www.atkenco.com/brand/radisson-canoe

not sure how it will work with your muck over mud bottoms but if you can stick a paddle , push pole , long stake down and hold it with one hand while lifting with the other you can be more stable and put that weight down on the bottom while swinging something heavy out of the water

also forget about sitting seats in a canoe you rest your but on them at most while kneeling , Kneeling like Lugnut you are as stable as it gets you can put your entire body into the stroke you can feel everything and your core does most of the work.

Looks stable. Might be a bear to drag/paddle through wild rise or cattails.

I have hunted, fished, and trapped out of small jon boats and pirogues. I have fished out of a canoe and a kayak. If I ever get to water trap in the south again my first choice would be another jon boat and my last choice would be a kayak.

I trapped nutria and beaver on lakes, swamps, catfish ponds, and rivers. You can work over the side and get in and out of a jon boat much easier than any of the others and you can carry more weight.

We own 2 kayaks and use them to fish and just get around on the water and they are great for that, but I would hate the thought of getting in and out of a kayak as often as I did each day trapping.

I have used canoes for nearly 30 years. Mine are just less than 13 ft long so they are not much longer than most kayaks and they have 750 lbs. load capacity. Mine weigh about 60-65 lbs. so are not overly heavy either.
I fish a lot out of mine as well.
