Have to let them rest for an hour..before cutting. That's the haahd paaht.

Just 15 more minutes ....it will still be warm

Hey Nessmuck....

I took a couple pix of a sourdough loaf I buy from a guy at the market on Fridays. He also makes round and long loaves as well.

I know you'll say it is burned but that amount of time in a wood bread oven gives the crust an incredible taste. The Italian bakers who brought sourdough to San Francisco did the same thing.

Your bread looks great but just wanted to pass it along.

Thanks for that info.

I think if I use rye and grains ...other than Bread Flour...it will come out darker

And I find that if I cook it longer for a darker finish....the bottom crust of the bread is very hard to chew.

Its fine line....I am still a noobie at only a little ovah 2 years of baking.

Still looking for that perfect loaf !
