What’s a fair price to charge for skinning and fleshing coons and some beaver?

Depends on how fast you are and what the final destination for the pelt is. If someone is going to tan them then they could be charged a bit more for you to do it. If they are going to sell the dried pelts they will not break even. I used to be able to skin 20 coons in an hour and flesh 10 - 15 in an hour depending on size. $3 a pelt (not that I would do them for that now) that's pretty good spending money in short order.

What is your time worth-charge by the hour.

If someone were to give me their bycatch and found coon, possum, or even skunk unworthy of their time I would be fully willing to skin and flesh for practice. I won't do it for a fiscal exchange based on my novice status.

X3 now is the time for the inexperienced trapper to learn the process except for beavers you can’t ruin stuff of not much value
