I think it might be interesting to grind up some raccoon meat for burgers. Has anybody tried this? Thoughts?

Make sure it’s fresh. Skin it, quarter it and let it cool down then after you clean up the worms you can decide if it’s something you still want to try. Bona’petit

I never tried it but I'll bet the grinder cleanup will be a challenge with those greasy things.

My uncle told me a story one time while we were coon hunting I guess I must have been around 10 or so. He had got invited to a BBQ and beer deal, he showed up had a few beers and saw everyone was getting these big ol plates of some kind of pulled meat and slapping it on buns so he joined in. Everyone was telling hunting stories and carrying on and he was starting wonder what the meat was because he didn't recognize the flavor, so he asked and he said as soon as the word coon came out of someone's mouth the meat in his stomach came back together, re-grew claws and jumped straight out of his mouth and covered his boots. I'll pass on any dish that containing coon parts

Ain’t had it ground, but had it pulled and out on a bun with a little BBQ sauce and it wasn’t bad. The toughest part was pulling the meat off a grilled skint coon with head and all.

I've ate it this way and thought it tasted just like pulled pork. But that was close to 40 years ago. At the time I thought it tasted better than deer

We've done pulled coon samiches at deer camp the last couple years as part of out "wild dinner"this year we did raccoon meatballs. Very good, but we mixed the raccoon with 50% hamburger when we put it through the grinder.


Life sure is tough when you don't learn from the mistakes of others.

Our gun club still has a muskrat and coon dinner every March as a fundraiser….sell out every year.

I’ve eaten many pulled bbq coon sandwiches. It’s delicious. Don’t really sure how the burgers would taste. Mix a little beef fat with it and it would probably be okay.

Only eat it as a roast with taters and carrots...
Actually thought it was a beef roast til some of the liquid and taters was gone and
seen the rest of the coon lay'in there.

Years ago the taverns used to have coon feeds.they would have coon and dressing sandwiches. They always wanted young coon.never did have any but a older neighbor lady used to make it and everyone raved about them.i Remember she used to make sure to take all the glands out from under the legs.

Batter and fry those worms. Look like deep fried onions and would make a great topper for that burger. Lol.
Coon ain't bad pulled. Never heard of it as burger.

Never tried coon but used to make a right tasty meatloaf from beaver.

cooked one up once , it reminded me of turkey legs


I skinned it , cut all the fat off I could , par boiled it , then broke it down and cooked it


I would think cook it till it falls off the bones shred and cut short so that it isn't too stringy , then hydrate it with a sauce

Gland removal is a given.
Every piece of fat you can get off the meat is a must.
Some parboil and cool to help fat removal.
My father mixed it with added meat ( usually Beef and suet).
Sausage seasoning and never much left for later.
If making breakfast sausage or mixed to fry.
He substituted beef for pork.

I refuse to eat one. All the years Ive hunted, fished and trapped I have always thrown the carcasses in the woods behind my house. Coyotes eat everything but coon and bobcat. If a nasty coyote wont eat a coon im not about to either. Ive heard several old blacks around here talk about eating them but I think ill pass.

Back in the fur boom, before rabies hit my area in the late 80’s. A few guys sold coon meats to city folks regularly. I would wholesale the skinned carcass for 4.00 a piece, they picked them up and filled orders. Those guys said customers breaded and fried pieces cut thin.
