throat cutting is for when they are spined and going to take to long to expire , you help them along
as others pointed out heart stopped it basically does nothing
get in get the guts out you will dump all the blood possible when you cut the heart and lungs loose
unless your going gutless then just get at getting quarters and straps off
one other place throat cutting can help is wind pipe removal , with the throat cut the wind pipe pulls out easier

Yeah what about inside tenderloins how to you get to that without opening the deer up Cut along the spine at the back of the ribs. Reach in and pull/cut them out.
