Found 10-12 Hen of Woods.
I kept 6-7 of the younger ones for pickling.
Does anyone have a favorite way to store a bunch ?

They of course can be dehydrated. I like to bread and slightly cook them then layer them on a cookie sheet in the freezer. Once frozen they can be put in freezer bags or dishes and kept frozen. They are real treat to finish cooking in the middle of winter. Very close if not as good as fresh.

I’ve always just thrown them straight in the freezer… No special preparations,,, just break them off into smaller portions and toss in the freezer,,, I do the same with my tree chickens aka sulfur shelf mushrooms.
For those who are not aware,,, hen of the woods and tree chickens are 2 entirely different species. This is a tree chicken [Linked Image]

Mine I do not. I fry them from frozen.

i fully cook mine before freezing have several bags in the freezer now use them in soups salads on top of meats or just plain just have to be fast when you thaw them out if theres people watching you and smell the mushrooms they will have them ate before you can put them in the dish you were preparing

I'll be freezing a bunch this weekend.
Looks like a banner year around here.
Crumbles will get dried and used in a pepper grinder for steaks and such.
