Well, we sat out to grow a years supply of potatoes. I think we did well. Now, the real work begins. With a hand injury, I won't be planting a 2nd crop or a fall garden at all like we normally do. We planted 50 pounds of seed potatoes and harvested over 170lbs. Yukon Gold, Red Pontiac, and Kennebec. Now, we will process them for canning, freezing, and dehydrating. As well as keep some fresh and 30-40lbs for next seasons seed.

For years potatoes at the store never varied much from a quarter/LB and often they would be on sale for less than 20 cents. Those days are gone! Good job Drake!
You mention a fall crop Drake. I always plant a fall garden but have never considered planting a late crop of potatoes. Any tricks? Do you need to cold treat the seed? Is there a Good Friday in July?

For fall potatoes, I replant the same day I dig my spring spuds. If the potatoes take 90 days in the spring, I add 1 week extra to account for the shortening days in the fall. I have better luck in the fall treating every spud with sulfur. My spring potatoes were done a few days early, they dried up and fell over. I sprayed neem oil 2x for bug control, but that was it. Since I replant my fall potatoes where I had my spring potatoes, I will amend the soil. First, I fertilize with blood & bone meal and top dress the rows with fresh compost. As soon as the green sprouts are 6-8" tall, I cover them up with more compost and heavy straw. They are sensitive to cold temperatures. With the way the climate is changing our first frost date keeps getting later it seems, but a row cover is cheap protection for a light frost. In my experience, fall potatoes are on average slightly smaller than the spring potatoes.

Most in this country have things people in other countries only dream about. Yet, they want America to be more like those other countries.

I've always liked Yellow Finn a little better than Yukon.

Yep, we will blanch, shred or chop (mix with peppers & onions if need be) and flash freeze to make hashbrowns and O'brien potatoes. They will be vac sealed and frozen for quick breakfast additions. I think he meant the fall seed in the ground, and any 'Taters that have grown.
