I talked with the neighbor , he said bullheads , skinned , head off , gutted and fried is exactly what he does for his nephews , they fish them soon as ice is off till water gets to 70 then quit till fall when the water is cool again

warm water bullheads are mush


America only has one issue, we have a Responsibility crisis and everything else stems from it.

Chautauqua County, nys...back in the 80s the local grocery stores bought

Spring only fresh caught bullheads for a buck 25 a pound

Good money back in those days and we prayed for a rainstorm

we never tried eating them but used to catch them at Bong or along the root river for fun as kids.

we mostly only ate perch and blue gills

my grandpa had a ice shanty on Browns lake , he didn't fish during the summer he worked construction 6 days a week

my other grandpa didn't fish unless he was going with my dad and I or Great uncle Bill (his brother in law) . Uncle Bill was all about the perch on Green bay we went with him some times and caught just messes of perch limit out a boat with 5 of us in it go back to Bills garage where he had some barrels and planks and spend hours cleaning perch I was a designated scaler when young as was my little brother
then we would have a bunch of family over for a perch fry.

I agree about bullheads edibility. Cold water early in the year = fine table fare. Once water hits 60 degrees, turn to mush. Ours in Idaho seem a lot yellower.

We call them mudcats also, ours are yellow, get around 15", & are a nuisance when fishing for channies. An old timer about lost it one spring morning when he saw us throwing them back, he took the rest that day sick

I used to help a guy commercial fish the Mississippi an rock rivers, can’t say I ever recall getting any bullheads but that guy could fill the boat with flatheads and channels. He kept a kids snow shovel in the boat to scoop out all the undersized ones lol. Seemed easier to get stuck by the smaller ones lol.

I was thinking of trying this one fried in cornmeal, but couldn’t come up with a pan big enough. You must have bigger frying pans down there.
