I like the oil from the fat inside the abdomen of the males best. Those big females dont have it. I keep it separate from the oil from the flesh.

Those big one has a lot of fat. I live in an area where people come from all over the country to fish for them, I never have paddle fished but will this spring. A rancher down the road has the equipment for me to use so we will give it a try. Lived here all my life and never have tried it.
