That is one very good use of beaver meat. Man, that was good. I'm glad I have some leftovers, even though I only made a small batch.

Here's what I started with.

I put in the meat, Campbells cream of mushroom and roasted garlic, partial pack of Liptons dry soup mix, Shitake mushroom strips, a bit of bone broth, salt, pepper and a dash of Worcestershire sauce. Stirred it well and turned on the crock pot.

With about thirty minutes to go, I cubed room temperature cream cheese. I stirred it in with a couple dollops of sour cream.

It was a bit thin, so I added a 1/4 teaspoon of xanthan gum and stirred it in.

I cooked the cauliflower penne noodles and put them on the plate.

Finally I ladled the stroganoff onto the noodles and had a bit of cole slaw with it.

Excellent. See how well cauliflower works with that ?

Have some canned beaver , going to make some stroganoff with.

Paul looks good , and you picked some better ingredients than my usual stroganoff .

Stuart Grell used to make beaver and noodles at the conventions. It was always real good.

He served it at one of the Trapperman feeds and everyone liked it so well that he had to make a second batch.
