Every year in December, we always make sausage. Since I got with my Polish wife, I've veered more towards traditional Polish Kielbasa. We made 48# of sausage this week, 16lbs of breakfast sausage and 32lb of kielbasa. Here is a picture of the finished kielbasa. I made over 500 lbs of sausage last year, its a labor of love but worth the effort. The stuff you buy from the store doesn't compare!

Making sausage can get addictive. About time for us to make some more soon now that things will slow down after Christmas. Good project for a chilly day.

We are about 35 minutes North of Carbondale, so not too far. I've been making sausage my whole life, but I really upped my game when I got with my wife. Going straight to the source for good Polish sausage recipes. I'll be gone the rest of the year, if I remember when I get back I'll post a recipe.

Just finished mixing 50lbs of kielbasa, 1/3 elk 1/3 deer 1/3 pork shoulder. sit for a day then stuff and smoke!
