At least I dont Agreed, my list was possible flavors not all at once. Oyster stew is all about the oysters the cream is just the delivery system and the possible flavors are to subtly get away from just milk flavor. Even the onion/shallot can be to much. Matter of fact I think my next pot will leave them out just a little sauted garlic butter, oysters, cream simmered with thyme and garnish with chives.

Look on the internet for The Splendid Table classic creamy oyster stew recipe. It's easy and good.

As long as the top of the stew has an oil slick of butter...were all good

BTW, I assume we are saving the oyster liquor and adding it to the pot. Because you should be. X2

I make this style often. You'll have to adjust the amounts needed. Sharon used my recipe and displayed a photo of it in a very special setting. Maybe she'll show it on here.
Oyster & Crab Stew
1/2 bushel fresh shucked oysters (about 2 QTS.) 2 LB. of Blue Claw Crab Meat 1 LB. of cooked and chopped "Double Smoked" Bacon with drippings added 2 Gallons of Whole Milk 1 QT. of Heavy Cream 3/4 cup Worcester Sauce 3 Tbsp. of fresh cracked Black Pepper 3 Tbsp. of Old Bay Seasoning 3 Tbsp. of Cayenne pepper 2 Tsp. of Celery Seed 3 Sticks of REAL BUTTER
Cook oysters separately with their liquor until edges curl. DO NOT OVER COOK! Heat milk and cream and add all other ingredients. Add oysters and simmer for 5 minutes.
You can + / - the seasonings according to your individual taste

Why the collision of ingredients..? I don't get it. Why ruin an oyster chowdah with crab...and vise-versa.

Because I like it different ways. I don't ruin anything, . . . and it' stew here, not chowder.

Are we sure you mean TABLESPOONS of the peppers and Old Bay? I like cayenne and that looks like to much. And quite frankly Old Bay is over rated.
