BTW, buttermilk is used as it is acidic. Reacts with baking powder to create gas to make them rise.

I bet you can't get good cane syrup to go on them biscuits, upstate.

You keep asking about Alabama and if you ever get down here you'll learn why cane syrup is the best.

The very best cane is ribbon cane from southwest AL and southern MS and LA.

Sorghum, pronounced sahGHUM, is a poor substitute for those poor folks who can't grow cane.

My wife makes "cathead" biscuits, basic biscuit recipe but no rolling or cutting. Ugly as sin but delicious.. lol

Upstate, Soft wheat flour is for biscuits, hard wheat flour is for bread, white lily flour is soft wheat flour.

Yup, almost all flour down here is soft. You've got to look hard to find hard.

One thing for sure is follow the directions to a T. Do not cheat or shortcut anything. A lot of recipes are just that recipes but they do not tell you the how, what and why. This is a good one:

We have home made Maple Syrup up here.But I use our home made butter or Gravy on my Biscuits.

Upstate, tryed my hand at some buttermilk biscuits this morning. First time I ever made biscuits that didn’t come out of a can. Can’t get White Lily flour here and barely had enough baking powder. They didn’t rise as high as them pretty biscuits on YouTube, but they ain’t bad eating. Best I’ve had all day anyway. [Linked Image]
Brushed a little honey and butter on the tops after they came out of the oven. They was eight of them but I had to make sure they wasn’t poison. grin
Gonna have to line my lovely bride of 40 years out on having the right flower and baking powder on hand. Can’t expect a man to make top shelf stuff working with inferior products.

Id eat those! Going to try some recipes this week that all of you were nice enough to share.I will look for that White Lily Flour,,but I don't remember ever seeing it around here.Thanks everybody for sharing.

We buy Bob's red mill flour. Its good quality but there are several other good flours out there. I would say do not bake a thing unless you have high quality flour. It could be a night and day difference.

Those look great. Like to try them with my homegrown peach jelly!

I get cane syrup from a great buddy of mine in Florida. I'd never had it before until I went hog hunting with him. We stopped at some ol boys place that had just finished making a big batch of it. Once you've had it, you'll never forget it. Great stuff, that's for sure.
