I don't notice a difference if I pull both triggers on my double 12s but ther has to be. I think I'm just not noticing it being focused on the effect on the target.

Yes, the energy is doubled. Twice the mass going out the front end, twice the force exerted on the back end.

IMO, the recoil will more than double. think of it this way. A single shot from a ten pound gun has X recoil. Two shots at the same time = two shots from ten pound gun which is the same as two single shots from a five pound gun. Trust me the recoil is more than doubled. I had a problem with a trap gun doubling when shooting doubles. After five or six doublings in a hundred target event I no longer can accurately shoot an over/under if two shell are loaded in it.

More than double, as mass of the firearm is part of any recoil equation. Mass of the firearm remains the same for one vs two shots. The rifle's mass is effectively half in the equation when calculating the recoil energy individually with two simultaneous shots as ebsurveyor pointed out.

Felt recoil is subjective for each person. So while numbers don't lie, each person's recoil tolerance is different.
