I’m back looking for a smoker, the one I purchased had an electric fan a safety switches. Masterbuilt 1050 an quit during a cook. I don’t care if it’s under warranty or not cause it’s gone to the dump. It’ll never quit again on me. I don’t want anything electric. I don’t want it to have any reason not to work unless I’ve had to much to drink an forget to fuel it.
If it burns pellets I don’t want it. I want a good quality, old style smoker that will not fail me.

Not enough info for what you're looking for. You smoking pork chops or a whole pig? How much $$$$$$$$ you want spend? Your choices are down to wood, charcoal, or propane.

They work but it's hard to control the heat. Folks did it for centuries though.

No propane…… want at least 1k sq in of cooking space or larger. Most I’ll be cooking on it is two 15lb briskets

I disagree
I can control the heat just fine in mine and none use pellets or electricity.
For example I have an UDS that I can set and it will maintain for 11-12hrs with no tending

Now if you don't want to tend a fire, pellet smokers and electricity are set and forget.
But if my power goes out I am still smoking, anyone dependent on electricity is SOL laugh

I ain't hatin on nobody for using whatever they choose wink

I have an older Oklahoma Joe smokers for the big jobs. Really like it. It's easy to control the heat and it's very consistent. Don't think the new ones are built anything like the old ones. I've even smoked cheese on it. Smaller jobs I use a PK.

I use a home made smoker.
Wood fire with burner outside of the smoker , piped in the smoke.

I have a large heavy offset firebox BBQ that I bought in Texas and shipped to Ohio.
Electricity - No way.
Charcoal - Never.

Learn to build and control a real wood fire.
Learn how to cut and split seasoned red oak, wild cherry, and hickory to fit your BBQ.
Learn to control the heat.
Learn to be patient with cooking time.
Learn how much smoke you want and put in wood occasionally to smoke because coals don’t smoke.

Then enjoy some real Q!

I smoke a lot of fish, and several times a year pork shoulders and briskets, I have a weber smoker, and it has never failed me. Easy to use, I load it and forget about it unless I'm doing a brisket then I have to reload it which is easy. I have the smaller one.

Me too, mines made out of an old metal two door closet reinforced with wood and a wood door. Got a real small wood stove at a yard sale with a crack in it for a heat box. JB weld took care of the crack. I put the box on top of the picnic table. Pile the wood stove in and start a fire. My box is approximately six feet high four feet wide and two feet deep. I cut expanded metal for racks and used rebar pushed through the sides for the racks to rest on. Bbq temperature gauge in the side about 2/3 up and a pipe with a flue in the top. Been smoking like this for 25 years. I use fruit and hardwoods to smoke

I use a Weber Smokey Mountain. Never had an issue with it. Makes great food.
