I cut each spear into 3 or4 pieces, wash well, salt and pepper (the only two spices I know), roll in flour, put in a milk/egg mix then back into flour. Have the canola oil hot and dump it in. Fry until perfect. It's fine eatin'.

It'll be a few more weeks before we can even begin to think about asparagus up here!
Common sense is a not a vegetable that does well in everyone's garden.

I figured out how good asparagus could be in Tokyo at a Yakatori Shop. They cut it in various length, wrap it with pork sliced so thin you could read a newspaper through it, put about 4 pieces on a bamboo skewer and cook it over a hot charcoal grill and sprinkle it with salt while it is cooking. They flip it over a time or 2 but it is still crunchy when served. Good to me! I found a picture showing how it is served. I grill or sauté at home and still try to keep it crunchy. Good stuff!

Olive Oil, roll in seasoned Panko crumbs and air fry. Add favorite spices while hot :-)
