How cold before Quikrete/Sakrete won't cure?
It's not near as cold here as up north. But I'm thinking below 50° F and it's probably not a good idea... Does that sound right?

Setting some posts. Nothing structural or anything that will bear weight like a driveway.

If it’s going in the ground you won’t have to worry bout it. I think it gets 80% of its strength in 3 days and full strength in 28 days. It it gets cold cover the top with insulation for the first 3 days. We pour below 0 and cover with curing blankets for 7 days without any problems.

For fence post's, I don't mix it, I just dry pack it after wetting the hole a bit, and it will set up just fine.
