Has anyone tried vaccum packing raw potatoes then storing in a cool place. Wondering if they would last longer.

Seems like without airflow around them they'd have a tendency to mold/rot.

I thought it was a thread on eating new potatoes! Sorry, but here goes, fresh new potatoes cut up with fresh onions salt pepper and butter in foil on the grill with a foil full of fresh peas with pepper and butter ,fresh slaw and several bluegills on the grill. Don't do that often these days but sure remember those meals when I ate more of them.

Potatoes, both irish and sweet are still "alive" and need air for proper long term storage. They are functionally like seeds but unlike seeds are not in a state of stasis still being live plant material, which is also why they get virus tested for certification as seed stock.

BTW, many cultivars of irish potatoes do produce true seed, hence the blooming, while most cultivars of sweet potatoes have had this trait bred out.

They would not keep if vacuum sealed.

We can potatoes every year. Because we peal them, we use white spuds. ( red potatoes many times have a lot of small indents, making them more difficult to peal nicely ). Use wide mouth jars, in pressure canner. ( a must for potatoes ). Watch that you don’t overfill a jar….if you do, when they are in the canner, starches from the potatoes will boil up an contaminate the seal between the glass rim and the metal lid. In a short time, maybe a month or so, they’ll loose their seal. Nobody will need to tell you when that happens.

I never heard of storing a new potato. We just eat em.


Trapping is what built North America, why take that away?

The big storage barns commercial spuds are kept in have serious temperature and air flow systems to keep them in good shape.

Interesting side note, some of those barns are getting repurposed for overwintering honey bees due to the controlled environment aspect.

You're right. We have seven storage facilities on site, six of which hold around forty thousand barrels of potatoes each. These buildings have elaborate air flow systems to maintain temp and humidity levels. Potatoes generate a lot of heat and it takes weeks to stabilize the temperature after the buildings are filled.
