yukonjeff OP trapper Y Joined: Jan 2008 Posts: 4,797 M.T.V. Alaska	I have a bunch of ground moose on hand so whipped up a batch of Moose Summer Sausage. I use the Backwoods spice and casings. We are in a warm spell here rain and not freezing so was able to smoke them.I am using mesquite, birch and apple. My smoke house got crushed by the ice this spring so had to go full redneck on that project, but worked great.
