I have a bunch of ground moose on hand so whipped up a batch of Moose Summer Sausage. I use the Backwoods spice and casings.

We are in a warm spell here rain and not freezing so was able to smoke them.I am using mesquite, birch and apple. My smoke house got crushed by the ice this spring so had to go full redneck on that project, but worked great.

I totally agree with you on this being a strange winter weather wise hope it will get back to our semi normal I'll blame Nancy Pelosi for it and Hillary ha ha !
