I got 2 does today and with this warm weather I’m unable to let them hang like I want. My question is can I age them in the fridge? I quartered them, and cut all usable meat off and threw them in tubs in the fridge. How long will they be good for? Thanks

Short answer yes. If I buy grocery store steak that is exactly how I do it. I just wish I had a walk in sized fridge

I've let deer age in a cooler for 10 days to 2 weeks. Fridge would be the same.

I let my deer age 7-10 days given the right temps. i hang them skin on and leave them, no meat loss from a dried outer layer that way. I've seen deer aged skin-off in fridges and have seen the outer skin get really dried out.

Do you guys that age skin-off have that? I guess most walk-in coolers are humidity-controlled to eliminate that problem.

Eh...wot?

Mine get boned out, put in cooler with ice then cover with water. Water gets changed everyday and ice added as needed. Seems like the water takes away any of the gamey flavor
