I grow mostly Montauk, it does well in our climate and freezes well. The customers at the farm stand like it also. We are down to probably 6 quart bags. I blanch it cut off the cob and freeze it.

Yep, except we put water in the bag too like we do with fish. It keeps it from any freezer burn.

We cook it some more after thawing. I don't think a quick blanch is actually cooking it.

I don't find it necessary to blanch it.
I've tried freezing it on the cob and it all ends up tasting like cob to me. Maybe it differs with variety.
