They are well cooked. Cubed and put in the pressure canner for 40 minutes at 15lbs. I just dump them out in a strainer, rinse the starch off of them, put them in a pan with some butter, garlic and onion (normally) and get them golden brown. Some salt and pepper and your good to go. Quite tasty.

Those look good. Had a neighbor growing up that was born around 1920 in rural SE Ohio. He told me years ago that they would plant a early crop and a late crop of taters. The late crop was covered with a couple feet of straw and old fencing and metal roofing was used to hold it down. He said in the dead of winter with snow on the ground his job was to go out and dig up as many taters as his Mama told him to. Sorry, seeing those taters this time of year made me think of that. Did you have yours covered Finster?
I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

The wife takes the tiny seedlings, puts them in a cardboard box and in the basement someplace (one layer). By planting time they have eyes that are 12-24" long and she plants them. We haven't bought tater seedlings in years.

we did 14 quarts of deer meat today to go with the taters we canned back in Oct.
