Dry fish batter...store bought or from scratch? Getting ready for a big Walleye fry this holiday weekend and was wondering what your favorite go-to dry breading is?

I typically dip filets in egg wash and then cover with Drake's mix that has some salt and garlic powder added. I have never had any complaints, but I am open for trying something new .....what say you!?

Fish crisp (Cajun).
Always bought here at Canadian tire store, not sure if it's available in the USA

1 cup crushed corn flakes 1 cup flour 1 cup Italian bread crumbs ..... Egg wash then batter ... Most importantly cover and refrigerate for at least a couple of hours to let the batter stick to the fish ..... I'm doing a big fish fry this weekend and always use this with great results ...

Depends panko, tempura or make my own.
I got a few recipes just depends what I want.
Good one is bread flour seasoned with s&p garlic powder, paprika, & parsley egg wash with Sprite mixed in.

Sly, I've had that Fish Crisp in Chapleau in the past....good stuff!

Eye, I have never done the refrigeration trick...I will this weekend for sure.

Adam, never thought of using bread flour instead of regular..??

Midlanders, try it you'll be impressed. It's not as dense.
Adding the Spriteor beer to the egg wash also adds more air due to the carbonation.

Met some flounder giggers 15 years ago that swore by pancake mix and ginger ale.

I like egg, club soda, and a good breaker.

My friends dad used a Pancake batter.....50 years ago..on flounder

I've tried making my own but it never seems as good as the store bought. Last year I got some "SHORE LUNCH" out of the mark down bin. It's pretty good stuff.

I use 1/3 Italian bread crumbs,1/3 bisquick (pancake batter) and 1/3 flour.Add a couple tablespoons grated Parmesan cheese.The cheese holds everything together and adds great flavor.Mix it all up.Egg wash then batter then deep fry.

I'm cheap and easy. I do flour, egg, and crushed saltines. When I have it, I throw lemon pepper in with it.
