Here's another Zim masterpiece. We've been back on the low carb wagon and doing great. Zim grilled some steaks and made some tomato slices with fresh mozzarella and herbs and a few veggies.

Good stuff here! How about you? What's for supper out there?
I hope you're all having a wonderful evening!

I'm grillin' Ribeyes. Salad with a boiled egg, peas, aparagus, red pepper and cucumber along with some scalloped potatoes and ham leftover from last night.

That looks very good. Zim is the man! Daughters have friends over and this week has been a long one so far! So cheated and brought pizza home and the girls went out to Dairy Queen for dessert. Nothing worth posting pics of tonight. My dessert sipping Jim Beam on the rocks in a momentarily quiet house! Love my wife for handling these girls everyday!

My wife told me not to burn the steak, I told her they are well done.

Zim, you made a perfect one again !

I lit up with Zim's tomatoes with melted Mozz.....I want to prepare those with rib eyes ...are they baked lightly ? Those are perfect for a side with such a meal .

I will copy that , asap grin

Glad you're home and having fun with the peanuts and your Zim and loving life .

I will love preparing that side of tomatoes with melted cheese , herbs, even drizzled with your Browned Sage Buttah grin

Buttah.......the secret to life !

Thank you for sharing ....yezzum low carb is grand ...with some splurges once in a while too wink

Took my Pop out he is 86yrs old he was diagnosed with cancer last year... 6 months ago he underwent major surgery to remove the tumor and rebuild his spine. Last month it came back, he started radiation therapy yesterday and tonight he destroyed this red snapper (say a prayer for him if you like) he is one tuff old bird... We call him Henry this is his cancer...
"Chordoma is a rare type of cancer that occurs in the bones of the skull base and spine. It is part of a group of malignant bone and soft tissue tumors called sarcomas."

I am grateful for each day the Lord sees fit to keep him on earth...

He did, Trapperkeck! It sounds like you have a good one in the works there too! I love scalloped potatoes and ham.

He IS the man, Trappingthomas! Good for you! Nothing wrong with pizza either. That's not cheating at all!

TDHP, I thought that steak was just beautifully seared on the outside! What a bunch of tasty stuff you have there! Thanks for the photo!

Breakfast is always fantastic for supper, Hodag! Love it!

Aw, thank you, Run! My life gets way out of control at times and I miss being on here. It's when it gets that way that Zim steps in and tells me to kick back while he makes supper. smile

HA! Beav, c'mon over! We'll set a place for you!

Why thank you, Cyaukeyy! It's always nice to know someone os out there enjoying these.

Oh, Nessy! That is a thing of beauty. I could wolf down a couple of those babies on any given night! Thanks for the photo!

Hey Sharon Chickie! You probably know what the winter tomatoes are like from the grocery store here! They're red and don't taste like much - but heated up they do take on a bit more flavor. (Obviously WAY better made with fresh garden tomatoes!) You slice a tomato, add a little salt and pepper on each slice, add a little fresh mozzarella (or Parmesan or whatever you have) on each slice and a drizzle of olive oil and put them on the grill or under the broiler or anywhere hot until the cheese melts and they're heated through. Then you can sprinkle a little bit of chopped herbs (basil, dill, Italian seasoning - whatever you have) on top of them and they are wonderful. The tomato slice is hot and tastes more like tomato than the usual winter variety, and all the good stuff on top is just icing on the cake!

Okay, Adam. I need some background info on that. I'll bet it's good!

Wonderful, Old_newbie!
