still have about 18 inches of snow in my hardwoods, the maple trees are just starting to run. Lots of leeks just a bit early. old243

they are just starting to poke up around here
3 weeks they will be on, and will run until late May in some spots

when they get fairly large,i dehydrate a bunch and grind them for seasoning.need to do more this year as i ran out by x-mas last year.i would love to learn how to make leek salt like they do garlic salt.anyone happen to know how??

all the old timers called them their spring tonic here.

I was wondering too if they were ramps.

Here in France they are called bear garlic. I don't much care for them but I know where I could pick bags of them.

How do you cook them?

not a cooked fan,like them raw and the best is a sammich with a little salt and buttah.

I like them chopped up and fry them with potatoes, omelets and I also cut up the greens and freeze them. Great with what was mentioned and in soups.

Should be good around here mid May.. Suck for me two biggest patches I have found are on state land. So of course they are hands off can't dig them. I usually dig a meal or two from a farm I trap and hunt on. Wish that patch was as big as two on state land I'd pickle a few of can some maybe.

Sounds good I think we are headed up toward Roulette tommorrow pcr2 hopefully they are big enough to get. Only days for next month we can go.
