I use apple wood for my smokehouse.I have an actual walk in smoke house,not one of them store bought "smokers".
the wheels of the gods turn very slowly

hickory can get overpowering quick,hundreds of shagbarks here but gets too strong for me.i prefer hard maple and apple./

I have an orchard with apple, pear, cherry, peach, apricots and plums trees, apple is my favorite one to smoke with.
I may not have gone where I intended to go, but I think I have ended up where I needed to be.

Any fruit or nut tree will give excellent results, and they have subtle difference's in flavors.

I saw some other talk about soaking their chips, DO NOT SOAK CHIPS. I have seen many people do this and all have resulted with rusting your smokers. It is not need and will actually postpone the process of smoking your meat.

i use mostly oak, hickory, peach and pear - b/c that what i have growing and handy nearby.
oak, IMO is milder than hickory
the fruit trees give a bit "sweeter" smoke flavor - each is different.
I've also used apple, cherry and maple. sugar maple being preferred to other maples.
this time of year, I like to buy the mixed nuts at the store and sit around the fire cracking and munching. I save up all my shells and will use just the shells for smoke too.
I also save up the hickory nuts from the yard in the tree and use them as well.
we dont have mesquite around here, unless you buy it - and I aint much on buying wood with so much free wood around. I will on occasssion buy it for smoking beef - nothing else but beef.
we used locust once and didnt care for it. have not tried walnut - just doesnt seem like it would be good for smoking Thanks everyone for all the great info. Do the hickory nuts taste the same as the hickory wood? I just moved to a house with a hickory tree in the yard, and have plenty nuts.

You can use grape vine also. I have used the trimmings and also chunks of the main vine. Different flavor.

Here I use alder for fish, and Birch for meat. I tried using hickory for fish, but it reminded me of bacon, so was weird, same with alder used with sausage ,reminded me of smoked fish, and was weird. Not many choices here, many use cottonwood for dried Salmon. Reading this post I'm thinking that this wood deal is like so many other things. If you grew up using what was local and native to your area. Then that becomes your flavor of choice for what your smoking. How would a person ever come to think Hickory was the only thing to use, if you never had Hickory to start with.. Kind of like making your booze from corn or potatoes.. If that is what you use that is what you learn to live with.. Guess a person can only experiment, use info from others and decide what you like. I've had access to what we call Tag Alders. Don't know if I've ever even built a fire with any let alone smoked anything with some. Guess I'll have to drag some home and try it. Mac

I have never cooked a nice piece of meat over a wood fire that I didnt like it. Do have some favorites though.

I've had access to....tag alders Ah, yes. That reminds me of where I grew up in northern WI. That, and also related in the birch family, hazel brush. That stuff was everywhere. No one that I knew of, at the time used if for smoking, In fact, I didn't know a soul that even smoked meat. We did collect the hazelnuts. Knowing what I know now, I'd sure give tag alder a try, along with the hazel brush, it you also have that.
