When sliced thin and fried it tastes more like ham then bacon but still good duffel. Makes a great egg and cheese Sammy.

If it's made from loin, it's Canadian bacon. If it's made from a butt, shank or shoulder.. it's ham. If it's made from the belly, it's American bacon.

Not in Canada it's not,not when cooked that way.
Pea meal bacon is made from loin,but it is pickled raw,rolled in corn meal or pea meal,not pre cooked.To cook it you slice the raw pickled loin and fry it.
What we call bacon here is made from side pork(see pic) cured and smoked,not pre cooked,but sliced and fried.
I like plain side pork fried.
I like smoked hog jowells too,they would be closer to what we call bacon than the ham style loin.

Your description of bacon is also what we call bacon. Made from side meat (bellies), cured and smoked, and then fried.

But down here, the cured and smoked loins are sold in the stores as Canadian bacon.
