Looks like smoked pork loin.You Yankees sure don't know much about Canada,lol. We make bacon out of side pork.We can get pea meal bacon here made out of the loin,but it is pickled,not cooked.You slice it and fry it like bacon. Anyway,I had something better than bacon for breakfast.

Ten days sitting and injected in a brine of salt, pepper, sugar and maple syrup. Thank you, just looked a little light on the cure, but I have had regular side bacon come out of a cure light like that. RTT
