If you want to use as much as possible, I'd focus more on other parts of the critters than the meat, especially on animals like coyotes. Besides the fur, you can save the glands and sell them to a lure maker. There is always a market for skulls, teeth, claws, even penis bones.
In Georgia, if it's legal (I'm not sure if it is) you can probably find a market for coon meat. Black people like to eat them. Possum too.
Bobcat, beaver and muskrat are all said to be good eating...all I've ever tried was beaver and it's good. Use it any way you would beef or venison. Those three animals also make good bait. Nothing will eat coyote or coon meat as bait.

Bobcat is good. Lion is even better. Some of the best jerky i have ever had. Not to derail a thread about coon and coyote meat, but the best value for bobcat meat would be in a bait jar. IMHO Although a hind quarter marinated and wrapped in bacon, then smoke bbq'd is awesome.

Enough spice and salt and lard can make just about anything edible. No it can't, and he's asking about the two nastiest critters to crawl. Coon even crawl after they're dead. I know some eat them, but more power to them, lol.

I know that I will more than likely throw some meat out and yes something else will eat it and it makes me happy knowing that I'm saying if I have it and I can use it I'm going to use it I don't like just throwing stuff away but I will have to at some point if I catch a skunk or something but if I have it and it's edible if I can make it tastes good if I can use the fur if I can bait traps with it or feed the meat to my dogs I'm going to. but yes i do admit I will have to throw away some meat and animals if I have to like skunks and I might not eat everything but I will use everything I can. That's the way it should be

And I know coon and coyotes are pretty nasty but I'm still going to try them both at least once I might not eat them ever again but I'm still going to try them. And yes I know it's crazy and I'm a little crazy but I want to try it.

I ate dog in Korea once, it was stringy and had a strong smell, after that experience I don't think I could eat a smelly coyote. I think they called it kaegogie, most of the younger generation Koreans won't eat it but some of the older generations still do. There is an Korean Island in the Yellow Sea off the coast of Inchon that is basically a giant dog farm. I was going to attempt eating a coon this year, but the one I chose had thin stringy worms in it's legs close to the feet, that cured me, don't think I'll be trying one of them either.

Naw, I appreciate ya wanting to use everything you harvest, it's a great thought. But, say you kill some rabbits, you just use the meat, right? Or do you tan the fur, make the feet into good luck charms? If you just use the meat of rabbits, squirrels, and fish, I don't see how it's any different than just using the fur from furbearers. Killing an animal for it's fur alone isn't wrong.
Seriously, nothing eats raccoon and coyote meat, not even buzzards if they find anything else to eat. Throw them in a pile, and they'll be there until they rot down. That said, a pile of dead coyotes would have marginal interest for other coyotes, they'll swing by to sniff about, but they won't eat any of it.

Yeah I might eat a little crow after I try them both but I'm gonna try it if I can't use them for trap bait and if I can't eat them well I guess I will just be getting fur and selling glands for lure as long as I'm using everything I can I'm happy just wanted to know if I could make them taste good that was my main question

And alot of the problem is how you cook it. I've had a yearling doe taste like a old tire because it wasn't cooked right. Same with bear and hog I know because I've had it happen with all of them but if you cook bear and hog right they taste great
