Grape jelly and Marshmallows. Any thing sweet. I am sure you will hear more. I like to use commercial
baits. But this will get your started.

Curious, what did you use to begin with? Opossums have been known to enjoy quite a bit of marshmellows, they'll eat everything a coon will eat. Know where it's coming from or activity areas? I know seems like a silly question but you'll be surprised on just how many people just show up, throw a bunch of baits in a cage and hope for the best with no idea who, why and what is drawing the coon to that area.Sweet minty odors, especially on chilly nights with an object hanging in the back of the cage placed in the proper location has an influence on coon. To give you an idea, this is one of my setups, its not fancy but it works well for me on coon.

I'd definitely try to lock it down at night if possible. The last dumpster job I did was for a Cumberlandfarms, dumpster was enclosed in chain link and folks still managed to get their trash in it. Used cables to fasten the lids down, and had them lock the side doors so nobody/critters could access it at night. Then set around the dumpster, not all jobs are the same but it worked. From reading your post, seems like you might have more than just a coon issue, if it's out in the open. When setting I'd make sure the area is free of any garbage or "diapers", and maybe start to think about a new contract if your site is being sabotaged.
