I cut the backstraps out of a recently trapped beaver. My wife soaked them in salt water with some vinegar for 48 hours. Then she cooked them in a skillet with some seasonings. Honestly, it tasted a lot like venison to me. Very gamey tasting and a bit tough. Any suggestions for next time....if I can get her to cook it a next time. We both were a bit let down. Please advise on some beaver cooking tips.
