The salted brine will keep the flys off while the strips dry for a few days before sticking in the smoke house the biggest thing we fight is rainy weather and so three fans get plugged in and are helping circulate the air for the drying period. In extreme conditions a very small cottonwood fire is built in the drying rack to give a b it of warmth to that circulated air not enough to cook them but enough to help them dry. Once they have a good glaze on the outside the fish hit the smoke house. Our first batch of king strips are being cut and vacuum packed for the freezer as I type this smile

Nice looking smokers there. Won't be long and we will start with the sockeye. We ran into fly problems also even with salt in the brine so had to build screened in drying racks. Like Otterman once they get a good glaze they hit the smoker.

I wonder if cold smoking would work on our white fleshed freshwater fish, suckers, pike etc. I know pike can have parasites if not cooked, maybe 2 weeks of smoke would make the difference . We have salmon in lake superior, nice whitefish, and lake herring.

Works on suckers and whitefish here. The problem is that those fish have so little fat/oil that they become like crackers.

We simply salt and dry the pike, whitefish and suckers but the pike get very hard the whitefish tends to stay softer and the suckers softer yet. dipped in a little seal oil and it makes a great snack or light lunch

A lot of cultures do. I eat the cheeks.

For brining, mine is a little fancy but is pretty good and great on reds. I got the recipe years ago and tweaked it a little to our taste.
Brine
1/2 cup salt
1/2 cup white sugar
1/2 cup brown sugar
1 tsp (more or less) black pepper
1 tsp chili powder
1 tsp garlic powder
1 can pineapple juice

Brush on / sprinkle on
molasses
white pepper
all spice

Mix the brine ingredients together well giving time for the sugar and salt to dissolve in the pineapple juice. Once dissolve put salmon chunks (4" wide strips) into brine and let sit app. 6 hours. I add some ice cubes to chill the solution, and stir/ move chunks around every couple of hours.
Remove from brine, very quick rinse then pat dry. Place on racks to begin glazing. After about an hour brush on a light coat of molasses and sprinkle liberally with all spice and white pepper. Ready to smoke.

I have a Big Chief and can get about 4 reds into the brine and into the smoker. Usually takes about 9 hours depending on the humidity.

I use a mix of alder and apple. Pretty darn good!

Wow no bellies. I would rather have nothing but bellies off the yukon kings in my smoke house.YUMMY. They are truly Yukon Gold!!!!!

Just have to cut them thin.

Personally I have never tasted a strip that I like as much as mine and the Superintendent at St. Mary's, whom I taught my method of doing it. They are just darn good.


To me there are two things that turn me off of some ones strips more than anything.
1. Fishy tasting.

2 Cut too thick and not adequately dried inside.

To combat any fishy taste you can't beat getting off the stuff that imparts the fishy taste. Fish slime!
I start by scaling my kings. It is quick and in the process of scaling you remove 95% of the slime on the fish. Clean rinse. The lack of scales is nice as well. Makes for a lot easier job of cutting them, less mess, and just a better product in my opinion. We just drop the fish off at the beach and scale with a knife prior to loading them back in a cooler. For years I cut with a knife. Last year I tried an ulu. An elongated blade actually. It was awesome. I have the pattern some where and want to make one.

Cutting the strips thin really aides in the drying time and ability to deal with damp weather conditions. The fatter the fish the thinner the strip needs to be. And there isn't anything better than belly strips.

I made the mistake of trying to dry fall silvers too fast with a fan. It was wet weather so I turned up the heat and used a fan and I dried some too fast and they would not dry inside well as the fan caused a crust. So be careful about trying to drying to fast.

I like strings. Extra hassle in some respects but it makes it easier in others. If you put your meat over the wood it is always prone to mold an is the most commonly spoiled part of the strip. Slip knot gillnet string and we use them for years. Don't cinch all the way to the meat as many more will drop as they slip off the skin easier. Just cut the meat and and stop. No waste this way.
You will always get a percentage that will drop. Maybe 3-4%. We just always put a clean tarp down the first day to catch. After the first day they will rarely fall.
I had some tutorial video but I can't find them.
I also use a potato float method but we soak for about 7-10 min if I remember right.
But the key ingredient I like to add is this as it imparts a slight sweetness.
After soaking we soak/roll/submerse in Yoshidas Gourmet sauce briefly and then slightly strip off the excess.
I use nothing but dry alder. Bark and all.
About two -three weeks in the smoke house and if there is a better strip I haven't tasted it in the last 26 years on the Lower Yukon.

I had heard my great grandparents in Finnish lapland would make a soup out of fish heads, potatoes, onions and carrots. (Kulla Mojakka) Pronounced gulla Moyakka. (fish soup)

didn't like the idea for years, then caught a few nice splake (lake trout X brookies) made a batch of soup out of the heads, took the meat off the heads after cookintg and threw the heads out. best chowder I ever had, great flavor! The kids even liked it and weren't bothered by the novelty of fish head soup. Lots of good meat on a trout head.

I think what you mean are CWT (coded wire tags). They are put into the roof of the mouth of the fish and yes, they are VERY small and would pass through you no problem.

the fish slime...
I don't know who told me, but white vinegar and water mixed 50/50 takes the slime off.

when dipnetting I bring a gallon of vinegar and fill a pail with water and mixx it in.

Dip the fish before filleting.
When you dip it for a few seconds and pull it out, the slime literally falls off. a quick wipe with a rag or the back of a knife and it is all gone.

When I only have a few to do, I will mix up vinegar and water in the sink and wipe the slime off the skin. Dip the rag, paper towel etc in the mix and wipe the fish. Slime comes right off.

Now, when I do the magestic Susitna river chums for smoking and giving away, I never wipe the slime. it adds to the awesome flavor.
