I hung mne for 3 days flipped them after the first day . Froze them then pulled them out 3 days before our auction. I recieved 66.00 a pound so I think they were done properly.

Turn them over. Cook the other side as in "flip the eggs"

Hang them on a wire. You flip after tge first day so they dry on both sides.

Having handled many hundred of pounds, I'll tell you how I dry castor. Using half inch dowels as a rack, hang the castors will cleaned over dowels. Place this rack four or five feet from heat source (use a wood stove). Place a small fan to blow across the stove toward the rack. After three days turn the castors. Dry that side for two days. Then they should be well glazed with a gray glazing, but still plump and shrinkage will be somewhat less. They will still lose some weight, but not as much.

I do not recommend that you place it near a source of heat.
