Like anything worthwhile, practice practice and more practice. You need to learn to hold the right angle every stroke. Edge angle is determined by the job your knife is being used for.
I now have a Dunn knife system and it is OK. When I get serious about razor sharp I also use a diamond stone and a steel. Just how I do it.
As important if not more then the stone is the knife. You can't keep an edge on a junk knife.

I have always sharpened my knives with a wetstone. With me getting to the point that I am losing some vision and seem to be slower than I used to be. I just got a Warthog V-Sharp today and haven't used it yet. It looks like a fine set up,and all the videos make it look good and easy. Read on a thread about the beaver skinning champ from MN. And I think someone said she uses the Warthog V-Sharpener. At least that's what made me look at it. Check out the beaver skinning threads, theres a link in there.

Drifter That is about the best answer you can get. A junk knife is a junk knife. Carbon steel IMHO is better than any stainless I have ever sharpened. I'm talking older knives, not sure but I think it was cold rolled steel. Like the case xx chromium back before every knife had to be shiny, and stainless.

Diamond sharpeners are best used on VERY hard steel., 50 RC +. Softer steel will literaly pull the grit off the base.

Work on the diamond stone untill the knife edge developes a burr. Once you have that get out the crock sticks and use them untill the edge get so thin that burr comes off. You'll have an edge that can shave with no effort. Want even sharper? Get out the leather and strope the blade, it will pop the hairs off your arm with no skin contact. What you end up with is a toothy surface that's highly polished on the very edge. Most folks call that a scary sharp blade.

The warthog works as it says it does. I personally like a 10-11 degree angle on my skinning and cutting knives. It only has a 17 degree as the lowest angle. There's nothing wrong with a 17 degree angle, just that even with my eye sight getting less and less I can still see the difference in the edge when I sharpen with it. The 20 or 25 degree angle is more for boneing or chopping. I agree a leather is the best finish on any sharp knife. I guess I'll just use it for the butcher knives and stick with my wet stone for the skinning knives. Although I think it will do a good job on my ulu if I take one sharpener out. I have shaved with my pocket knife just like in that video. Only it was in a bathroom in a bar 30 years ago. WON A NIGHT OF FREE DRINKS LOL

One more thing ,I don't care for useing oil on my stones. Water only for me. Just the way I do it.
