Hey guys, I was wondering if you guys could share some of your favorite snapping turtle recipes? A couple of my friends and I have some we caught and cleaned this summer that we wanna cook here soon.

Bacon Wrapped Snapper Bites

Ingredients -

1-2 large snapping turtles cleaned and quartered
1-2 large Sweet Onions
Salt/Pepper
2-3 packs bacon
3-4 cloves garlic
1 box toothpicks
3-4 celery stalks
Your favorite spice or meat seasoning

Lay the snapper quarters in a large soup pot and cover with water. Roughly chop the onion and celery and add that to the mix. Crush the 3-4 cloves of garlic and add them and then salt and pepper to your liking. Now boil the entire mix for 3-4 hours or until the meat is fall off the bone tender. Dump the meat onto a large cookie sheet and let cool so that you can work with it. Go through the meat and tear the chunks off in quarter sized pieces so that you can roll them in the bacon later. Take your favorite spice or seasoning and mix it into the deboned meat and then proceed to wrap the quarter sized chunks of meat with half a strip of bacon and secure it with a toothpick.

Now fire up the grill and throw the bites on only long enough to crisp up the bacon and enjoy.

Turtle Soup
~ 3 lb's boneless turtle meat
~ 5 bay leaves
~ 1 tbsp salt
~ 2 tsp white pepper
~ 1 3/4 tsp garlic powder
~ 1 3/4 tsp ground red pepper
~ 1 1/2 tsp onion powder
~ 1 1/2 tsp ground thyme
~ 1 tsp dry mustard
~ 1 tsp black pepper
~ 1 tsp dried basil
~ 1/2 tsp cumin
~ 4 tbsp unsalted butter
~ 4 tbsp margarine
~ 1/2 lb finely chopped spinach
~ 2 cup finely chopped onion
~ 1 cup finely chopped celery
~ 3 1/2 cup tomato sauce
~ 2/3 cup flour
~ 1 tsp minced garlic
~ 11 cups broth (vegtable stock works well)
~ 1 cup lightly packed fresh parsley


Combine the bay leaves, salt, white pepper, garlic powder, red pepper, onion powder, thyme, mustard, black pepper, basil, and cumin together. Set aside.

Chop the turtle meat into bit size pieces.

In a large dutch oven, melt the butter and margarine over medium heat. Add the meat and cook for 5 minutes.

Add the seasoning, spinach, onion and celery. Cook for 15 minutes.

Add the tomato sauce and cook 15 minutes.

Add flour and garlic. Stir.

Add 9 cups of broth and cook for 1 hour.

Chop the parsley and add to the soup along with the last 2 cups of broth.

Cook 10 more minutes.

Serve and Enjoy!

I like to just fry it up in some olive oil,with fresh garlic,parsley,salt and pepper.A nice shot of wine thrown in gives a nice flavor also.

If you want to make it easy.

Fry just as you would chicken I prefer Canola Oil for all frying. salt and Pepper of course. When browned not cooked just browned This helps keep the Flour on the meat, then transfer to a pressure cooker. I put a very small amount of water in the bottom of my pressure cooker so it doesn't burn the pot when you first start cooking. It will take a little bit to build the pressure i start the pressure timing when the little top starts to jingle. Wait 20 to 25 minutes.

This gurantees the turle is cooked properly, and the meat should be so tender you can pull it right off the bone. I do this same method for a lot of wild game.

Roll in flour, brown in a skillet. Put in a crockpot, cover with a can of Cream of Chicken soup and about 1 cup water. Add whatever spices you like. Cook on low for 8 hours.

Thanks guy! We only have 5 turtle that we got over the summer and a lot of those sound good! I'll have to save them and use them next year!
