I roasted one of the beavers I caught last week. Just the front and rear legs off a 34 pounder thrown in a roasting pan with some carrots, onions, celery, some beef bullion cubes and a packet of Lipton Onion Soup mix.

Ready for the oven. The meat has already been seared/browned in a cast-iron skillet.

My granddaughter helped me with prep. Here she’s peeling some rutabagas.

The cooks helped themselves to the backstraps, we had them for lunch.

I made gravy out of the drippings from the backstraps.

The rutabaga has been diced and tossed with browned, butter, salt, and pepper, and is ready for the oven.
