So, I am cooking a pot of gumbo as I type on Tman. You can just about put anything in gumbo....and I wonder what y'all put into your favorite receipe...

Sorry, I don't watch any of the cooking shows and I've never had gumbo. Are there some basic ingredients? ( I figure DaveK probably borrowed a bunch of road kill from Pesky )

Canada goose, mallard, andouille sausage, celery, onions, green pepper, garlic, okra, green onions, water and seasonings added to a roux made of flour and olive oil.

Okay. if those are the basic ingredients I'm going to have a problem. While I have probably picked all the other ingredients on my way to shooting mallards and geese, what size shot do you use for the andouille sausage?

I used chicken stock, rather than water...but I forgot garlic. ugh. The waterfowl would have been better than the chicken....oh well...I will just need to make another pot.

Winkie - If you never had gumbo.......you are missing out. If you are going to the conference in New Orleans, that would be the place to have it. That should be on your bucket list. Speaking of which....did you ask Al if he checked the one off his list that was on the back side?

Love gumbo the eating kind, hate gumbo the Montana mud kind. I started an exclusion job this weekend that I quoted digging in relatively dry soil, it rained two inches the day before I started. Digging in that stuff was the consistency of Play-Doh, every 3-6 shovels full I had to scrape off my now 10# shovel with another shovel. Now back to food, I had my first gumbo in Winnsboro, Louisiana at a silhouette shooting match back in 1996, YUMMMMMM. I had my second taste on the Alcan highway on my way to the Arctic Circle. Too long a story to type.
