foxkidd44 trapper Joined: Jun 2007 Posts: 4,692 Illinois	that is called salsify.......no market...but the roots are quite edible....i've never tried them , but i have heard the taste being like that of shellfish. my understanding is that you prepare the roots the same as you would for potatoes.
