Ah, you can make on for one size fits all. I don't know where my digital is at the moment so I will try to explain. I use this on my power skinner but don't do rats on it, table is the best for them.

I used a piece of 3/4" piece of sucker rod what ever length you want. It is welded into a very short triangle with pulley swivel welded to the top. I then drilled holes through the bottom of the triangle at my random spacings I chose. I used 3/32" snare cable on the inside spacings and 1/8" on the outside one for the bigger animals. The top of the cable is doubled over through a 3/32" double ferrel. The end is simply like a 3/4" loop or so crimped off with a double ferrel. The cable is in a slip setting through the 3/4" in loop. This enables you to slide that cable open and put a leg in it and put a little pressure on the loop and it closes on their leg. Very easy. I have yet to break a cable and there have been tons of animals ran through this.

There are several people on this board that have skinned on my skinner and I know that many have gone and made this same set up. Cheap and easy.

I found the camera. Here is a pic of a loop and the very outer cable on my gambrel.
